Three Day White Truffle & Wine Workshop, 17-20 November 2026

Join Marco Lami, owner, host and sommelier of Enoteca Marilu, in this three-day deep dive of white truffle, natural wines and cheese during the height of San Miniato’s white truffle season!

White truffles are very rare, they have a short season (October to December), they only grow naturally in a handful of places in the world and under just the right conditions. They cannot be farmed, they are only found growing in symbiosis on the roots of particular trees, and we humans must rely on the help of dogs, who can sniff them out for us. We are so lucky that where we live is the heart of white truffle country and every November since the 1950s, San Miniato has celebrated their special ‘diamonds of the kitchen’ with a white truffle festival. We’ve designed this workshop over two days, which will finish the afternoon of the 19th November, but if you stay one more day, you can enjoy the white truffle festival on Saturday 20 November!

17 November (Wednesday): Arrive in San Miniato and come to Enoteca Marilu for an aperitivo with light dinner.

18 November (Thursday): Meet at Enoteca Marilu at 9am. We’ll then drive to the woods (20 minutes away) to meet our expert truffle hunter, Luca, and his truffle dog, Fiuto, who we count on to lead us to some delicious white truffles. Afterwards, we will have a cooking lesson with Marco where you’ll learn how to get the most out of white truffles, and then we will enjoy our lunch with paired natural wines before heading back to San Miniato for a free evening.

19 November (Friday): Meet at Enoteca Marilu at 9:30am. This morning we visit a very rustic, local cheesemaker with a herd of goats. We’ll learn about how they make cheese and have a tasting of their delicious goats cheeses and their natural wines (they are also wine makers!). Afterwards, we head to another nearby biodynamic and organic winery for a light lunch, followed by a wine tasting, before heading back to San Miniato for a free evening.

20 November (Saturday): San Miniato’s White Truffle Festival will be in full swing from 10am-7pm, explore at your own pace and enjoy the incredible smells and sights of the town’s biggest festival.
