  • Market Day Cooking Class

    A relaxed, intimate, delicious class suitable for all ages and levels. We visit the local market to buy seasonal ingredients, bring them to enoteca kitchen and cook a long Italian lunch together.

  • Pasta Masterclasses

    In this dedicated, intimate pasta class, slow food at its best, we will make one seasonal pasta dish but we will make it all with care – pasta and sauce – and from scratch from beginning to end.

  • Wine classes

    Sommelier Marco Lami leads these fun, informative and delicious low intervention wine classes with paired foods, wine notes and more for an unforgettable experience.

Seasonal Culinary Workshops

On these intimate, highly curated culinary workshops over 5 days, we focus on fresh, hyper-local, organic produce and low intervention wine; we meet wonderful food artisans such as the fig grower or the brothers baking sourdough with ancient grains. We visit the local market and the Slow Food butcher to gather ingredients, we might forage, we cook and eat together. According to the season, we may learn about beekeeping or visit a biodynamic winemaker before taking you to our favourite trattoria for a long Italian lunch. Marco will take you through Tuscan wine lessons, and we hunt for truffles with our tartufaio friend and his Lagotto dog (we do this year round, black summer truffles, autumn white truffles and spring bianchetto truffles all grow locally). And most importantly, we spend time cooking, drinking wine and eating together, while learning about local traditions. See an example itinerary.

Join a Cooking Class.

Join Emiko for a Market Day Cooking Class on Tuesdays. We visit the local market, buy seasonal produce and cook a hands-on, vegetable-forward Tuscan meal (usually an antipasto or two, fresh pasta with sauce and dessert), which we enjoy with wine over a long Italian lunch. This is a very relaxed, delicious class suitable for all ages and levels of expertise. The class has a maximum of 8 places to ensure an intimate experience for everyone and is roughly 5-6 hours long (as long as a long Italian lunch takes). We meet at 10:15am near the market.

Emiko’s Pasta Masterclass on Thursdays is a small class of 6 people maximum and it focuses on one seasonal, fresh pasta dish that we make from start to finish, pasta, sauce and all. We enjoy it together with paired natural wines, dessert and coffee. We start at 10:30am at the Enoteca.

Kids under 12 free but must be accompanied by an adult.

Wine Classes

Regional Italian Natural Wines

A class led by sommelier Marco Lami to introduce you to Italian Regional wines and the world of natural wine through tasting, theory and curiosity! You will learn not only about the characteristics and differences of Italian regional wines but also about the basics of winemaking, what the main differences are between conventional wine and natural wine, how to taste defects in wine and what they mean, as well as the difference between biodynamic and organic winemaking. Includes a light lunch pairing of regional dishes. This will be a fun and delicious class of about 2.5 hours.

Vino Deep Dive with a Sommelier

This intimate and exclusive sommelier-led class takes you on a deep dive across Italy through wine, demystifying Italian wine and covering subjects like natural wine and food pairing, over a 2 hour-ish class. Ask Marco anything you’ve always wanted to know about wine — this is open to beginners and experts — he will have you tasting many, many interesting, hard to find wines and it will all be accompanied by delicious food.
